Chef Amninder Sandhu’s Palaash, located in a secluded part of Tipai, a luxury safari resort near Tipeshwar Wildlife Sanctuary, is an intimate 25-seat restaurant that embraces slow-cooking over an open fire in a gas-free kitchen. Sandhu leads a team of ten local women from Marathwakdi village, who bring to life a seasonal, ever-changing degustation menu inspired by her travels and the culinary traditions of Maharashtra. Dishes like Saoji Bater and Bamboo Smoked Pork reflect regional influences, with ingredients sourced from the resort’s own garden.
